Thanos has the time stone which makes speed related feats invalid. He has essentially durability negation with the power stone, soul manipulation with the soul stone, and reality manipulation with the reality stone. He can be anywhere at any point in space through the space stone, and he can logically even create life with the mind stone. There is no concept Thanos can't control, and he could easily end or create a universe whenever he desires, and his version of overwrite doesn't require physical touch like DIO's does. He doesn't have to do much of anything. He just needs to decide to win, and he does. That's why the battle ended as soon as he got the full Infinity Gauntlet, and the same when Iron Man got it in Endgame.
