Sorry, Fam. Jotaro just doesn't have the AP or Defense to stand up against Goku. One might say Goku can't see stands, but that's questionable due to ki and his ability to sense it. After all, Stands are made of life force, and Goku senses that. And even if he can't see it, that is a non-issue with him as he has Ultra Instinct, which is shown to react even to things that haven't happened yet, let alone to things the user can't see. Even still, we would need to measure his strength against Goku's and I don't think he has what it takes.

The only way I can possible see jotaro winning this is if he stopped time and crushes gokus heart. But that would be completely out of character wouldn’t it?

And even if it wasn't, Goku likely has the same defensive capability on his heart, along with SSG regeneration. I just don't see Jotaro winning. He's gotta catch Goku so off guard it's not even funny.
